A "ONEPOT1DER RECIPE"©


Pumpkin Colcannon (Indian twist on the Irish dish)
This is the OnePot1der!  It all happens in there.

  • qrtr. teasp. each of crushed black pepper, cumin powder, turmeric powder plus a pinch each of salt, coriander powder and amchoor (mango powder).
  • 1.5 cups pumpkin diced to 1cm cubes
  • 0.5 cup of peas (fresh popped from pod – frozen if you have no other choice)
  • 0.5 cup carrot diced to 1cm cubes
  • 1 cup potato diced to 1cm cubes (or add leftover mash or use good quality dried**)

Put all veges to boil in sufficient water to cover but not drown. Cover the pan and keep an eye on the water level. Veges should soften to mashing point and still have a little liquid left. 

Drain the juice (nutritious!) and put aside the veges. 

In warm pan put half teasp ghee/butter and as it softens add the masala to temper it. Add back the stock (but not more than two tablespoonsful) and allow this to integrate well, then add back the veges and mash the lot together.

Serves one person as a full meal on its own, or two with a side salad.




**Here in Mumbai of all places I have discovered THE BEST packet potato I have ever eaten. “Aloo Mash” (aloo just means potato) is truly delicious – created with Dutch technology. (Of course.) Made to directions, you’d be hard-pressed to tell the difference. Just thought I’d let you know that…
