Final Friday Feestuffs

Goodness gracious me - last Friday of another month!

A simple, superb soup again for you; I am a great believer that if you have nothing else, soup is the food to get hold of.  What is more, no matter what you have left in fridge or cupboard, if you have some basic stock and seasonings, just about anything can be made into a bowl of warming nourishment...just add a roll or sandwich and hey presto!

I make this particularly one at least once a month - often more because it is just that delicious!


Pumpkin Carrot Silk

Ingredients;
*      1kg butternut pumpkin (squash) or 1kg of any pumpkin of choice
*      3-4 medium carrots
*      1 level teaspoon turmeric powder
*      2 level teaspoons paprika
*      Half teaspoon of cumin powder
*      2 Knorr vegetable stock cubes
*      1 litre water
*      200gm plain yoghurt
*      Season according to taste.

  
Method;
Peel and chop the veges and place with all other ingredients in soup pan.  Bring to boil then simmer for 30-40 minutes.  Veges should be fork-mashable and water reduced to  about 700mls.  Allow to cool slightly before blending.  After blending put through very fine sieve to ensure completely smooth.  Reheat before serving and stir in the yoghurt.  Garnish with finely chopped chives or other fresh herb.


Another variant of this soup would be to substitute (or add) red sweet potato.
