MenU; Menolishables (for Snackoholics)...Sweet Potato

It's not what you think!!! It's yer standard earth apple, sweetened.

I kid you not.

Was thumbing through the Great British Potato Recipes book, thinking that having put some meaty stuff up in an effort to make all feel welcome, I needed to return to the  more vege options ... and had entirely forgotten there are several dessert options! The best chocolate is the very dark, unsweetened variety. Such chocolate is a vegetable. Such chocolate is medicine. The fondant part is the killer...

In order not to have too much drooling on keyboards happening, I had a go at creating a likeness with mouse and software.

PEPPERMINT CREAMS

8oz/225gm       icing sugar
1oz/25gm          cooked potato, sieved
few drops         oil of peppermint
2 teasp/10ml     water
a little                green food colouring
4oz/125gm        chocolate, melted.

Beat the icing sugar and potato until the mix forms 'breadcrumbs' texture.

Add enough colouring to make pale green, add peppermint oil to taste. Beat in water gradually until lightly bound together.

Take a spoonful of the paste and form into a ball, and repeat till mixture all formed. Dip into chocolate and leave to set.
