Regulars will recall last week was Diwali and that I had my pal Aitch visiting for a few days. Today I share with you the prep of two of the dishes for the festive meal. Aitch is very sensitive to strong flavourings, so I did adjust slightly on the recipes - but that is the beauty of any spiced food - no two are the same and every one can be adapted according to taste and preference. Lots of folk ask how to make certain things, particularly curries. It occurred to me to film the preparation. I do not give specific measurements - because the way I learned was to be with my peers and 'aunties' in their kitchens and simply observe because Indian mamas are not that great at writing down recipes!!!
Anyway, here's how it went - and I'll fill you in more in Aitch's visit next week.
Hi Yam - sounds like you had a fun time ... I've never learnt Asian cookery ... and rarely eat it - however I prefer the flavoursome foods and I love cumin and use that all the time! Fun to see - have a happy weekend - Hilary
I do like Yam in the kitchen - not least because you cook like me, from your senses rather than instructions. I always feel there is little to go terribly wrong in most cooking, especially on a hob, and that we over worry about specific quantities of this or that, when in fact most recipes are just 'versions of' with the potential for infinite variation. Off to bake some bread...
Hari OM LOL - not necessarily; though it gives greater control over flavour, you can always just begin with a ready-mixed masala, such as Schwartz from the supermarket! I deliberately didn't use voice so as to provide ASMR experience! Think 'slow telly' &*> Yxx
